The Most Delicious And Moist Zucchini Bread





On my pinterest page I have a Pinned It, Did It Board where, if I remember, I pin the recipes, crafts etc. that I have tried myself. 



Today I am bringing to you my favorite recipe that I have pinned thus far! 
The Most Delicious & Moist Zucchini Bread

I never made zucchini bread until I found this recipe, and I will never use another recipe again! I have gotten so many compliments on it that it would be terrible of me not to share it with you! 

SunStreeks on Hubpages shared her mom's moist zucchini bread that she describes as banana bread only better! And she is so right, this bread is addicting! 



The Most Delicious & Moist Zucchini Bread 
Makes: 2 Large Bread Loaves, 
or 
1 Large, 1 Medium and 3 Small loaves

Ingredients: (I adjusted the recipe just a little for self rising flour, and less vegetable oil) 
  • 2 cups Grated Zucchini, or one medium-large zucchini
  • 3 cups Self Rising flour 
  • 2 cups Sugar 
  • 1 3/4 cups Vegetable Oil 
  • 2 tsps Vanilla 
  • 3 Beaten Eggs
  • 1 tsp Baking Soda 
  • 3 tsp. Cinnamon 
If you are not using self-rising flour add 1 tsp of salt and 1/2 tsp of baking powder as well. 

1. Preheat oven to 350 Degrees F. 
2.Peel skin off of zucchini, cut into chunks and grate into large bowl.




3. Add all of the ingredients into the large bowl and mix well.
4. Pour into a Foiled, Sprayed and Floured (it comes out without any worry!) Bread pan.



5. Bake for 1 hour at 350 Degrees for 2 bread loaves, or if you mix them up like I do, put them all in for 30 mins at 350 degrees, the smaller ones will be done by then and then let the large bread pan cook another 10 minutes.

6. Take out of the oven, let cool. When cool lift foil out of bread pans and let finish cooling in the foil on the stove top. 



Tips: 
  • I LOVE self-rising flour! It already has the baking powder and salt included so that is 2 ingredients I do not need to worry about. Makes everything just a little easier! 
  • Using greased foil with flour allows easy transfer from bread pan to cooling rack without having to flip, which always crumbles my bread! I found this way easy with a simple clean up!
